A veggie pesto pasta dish
We all have those days when a bowl of pasta will hit the spot! Our friends at Boxxfresh have come up with this basic but delicious recipe for green pesto pasta, that comes with zero faff! Full of flavour and chopped veggies, this dish serves 4 people perfectly.

Ingredients:
1 courgette – chopped
A handful of tenderstem broccoli – chopped
A handful of mushrooms – finely sliced
2 cloves of garlic – finely chopped
1 heaped tbsp of green pesto
500g of dried pasta
Pinch of salt and pepper to taste
Olive oil for cooking (or another oil of choice)
Method:
Cook your pasta following the instructions on the back of the pack.
Once cooked, take a little bit of the pasta water and pop it aside. We can use this later for the pesto sauce! Drain the rest and set aside.
Grab a shallow pan and pop on medium heat.
Add your oil and garlic and stir in for two minutes – try to not let the garlic burn!
Add in your mushrooms and lets these cook off in the garlic oil for a few minutes.
Now, take the rest of your veggies and add them to the pan. Stir everything together and let it cook down for five minutes.
Add your pesto to the veggie mix, and gently stir.
Have a quick taste and season it as you please.
Add your pasta water, three or four tablespoons should do the trick. The starch in the water helps to thicken the sauce and allows the sauce to stick to the pasta!
Tip your cooked pasta into the pan and mix into your delicious veggies.
This dish is perfect to serve hot, but also tastes great as a cold lunch dish. If you want an extra kick, top with a drizzle of chilli oil – or use grated cheese!
