A sparkling mocktail recipe

Sparkling apple and honey mocktail

It’s always five o’clock somewhere – but sometimes all we want is a refreshing tipple without the added alcohol! For those of us looking for a non-alcoholic cocktail, this recipe is just the ticket.  

Hidden within Silversprings Garden Centre in Titchfield is The Summerhouse Coffee Lounge, where you can pick up jars of delicious honey, made fresh on-site. You can also find vegan honey locally made by Dee’s Kitchen within Robins Nest Emporium in Fareham. 

A combination of fresh apple juice and local honey, this mocktail serves six. 

Ingredients 

 

4 cups apple juice 

3 tbsp lemon juice

2 tbsp honey 

4 cups club soda 

1 cinnamon stick, break in half 

1 star anise 

1 apple, thinly sliced

½ lemon, thinly sliced

2 cups ice cubes, or as required 

Method 

 

In a jug, add apple slices, lemon slices, cinnamon stick, and star anise. 

Pour apple juice, lemon juice and honey. Give it a good mix and refrigerate for one hour. 

Take it out of the fridge just before serving. Add ice cubes in a serving glass. 

Fill half the glass with the juice. Then pour chilled club soda into it when you’re ready to serve. 

Garnish with a cinnamon stick and apple slice. 

The ratio between juice and club soda should always be 1:1.
