The Boxxfresh Bubble

The Boxxfresh bubble

These veggie experts have put together a recipe for bubble and squeak that is a must for this post-Christmas break…

Bubble and squeak is one of life’s great pleasures, it’s totally delicious, feeds a crowd and obviously brilliant for using up any Christmas leftovers!

Boxxfresh is a local veg box delivery company, based in Titchfield but delivering across the UK. You can read about them here.

Or pop over to their website for more tasty recipes!

The ingredients for the bubble are all down to you and what you have left over from your Christmas feast – any mix of the following is great!

Roast potatoes
Mashed potatoes
Roast veggies like carrots, parsnips, butternut squash, celeriac, leeks and onions
Roasted or steamed sprouts
Cabbage
Any crispy herbs or whole roast cloves of garlic from the roasting trays

A handful of seeds or breadcrumbs for a crunchy topping!

Method:

Pre-heat the oven to 180c/ 350f/ gas mark 4.

Roughly chop your chosen veggies etc and add them all into a mixing bowl.

Roughly mash everything together with a potato masher until your veggies are a big jumble.

Warm some olive oil or a knob of coconut oil over a medium-to-low heat in a large frying pan and spoon in the mixture. Allow to gently cook until the bottom becomes golden turning occasionally so not to burn – don’t rush this, allow the veggie mixture to go a lovely golden colour…. this brings out the taste!

After about 20 minutes of cooking and turning, transfer the Bubble mix to a heatproof serving dish. Scatter the top with seeds or breadcrumbs (or both!) and pop in the oven to bake for 20-25 minutes.

Tuck in and enjoy your Boxxfresh Bubble.

If you make the Bubble, take a pic and post it to social media and email it to fbc@polymediapr.co.uk
